Wrapper-less Eggroll in a Bowl

I have a colleague at work who I talk a LOT about my cooking with. She sent me this Eggroll in a Bowl recipe, and it sounded intriguing. Of course, I had to put my own spin on it, and use Beyond Meat!

“Eggroll in a Bowl”

Ingredients (those in italics are optional)

  • 1 package of Beyond Meat, or any ground meat of choice
  • 3 heaping tablespoons of minced garlic
  • Packaged coleslaw
  • 2 tablespoons of soy sauce
  • 2 tablespoons of ground ginger
  • 1/4 cup of stout (yes, this is boozy – you can leave this out if you have kids, or do not want any alcohol)
  • 1 large egg
  • Sliced green onions
  • Sriracha

To prep, in a large cast-iron skillet, cook the meat until brown. If you are using the stout, add it in, and cook until absorbed. Add in the minced garlic, and cook for another minute. Once you can smell the garlic and it’s fragrant, add in the coleslaw, ginger, and soy sauce, and cook down until the coleslaw is wilted to your liking.

At this point, make a well in the centre of the mixture, crack the egg, and scramble it and incorporate it with the rest of the ingredients. Once combined, if you like some heat, add in some sriracha. Spoon into bowls, and top with the sliced green onions.
