Vegan Meatloaf

I first encountered Beyond Meat at a speaker dinner for a conference I was at in 2019. It was an all appetizer spread, and meatballs were part of it. When I found out from the server that they were Beyond ground – I knew I had to go find this magical “faux” meat. I did, and started to experiment. Thus, a meatloaf recipe was born.

  • Preheat your oven to 375ºF
  • In a bowl, mix a package of the Beyond meat, spices of your choice, 2 tbsp each of soy sauce and maple syrup, minced garlic, tomato sauce, and for a kick – gojuchang paste.
  • Prepare your meatloaf tins (I use mini silicone ones), and cover with foil. Bake in the oven for 45 minutes.
  • After the initial 45 minutes, remove the foil, and add some panko breadcrumbs and vegan cheese. Bake for another 20 minutes.
