While tacos go best with Taco Tuesday, they are good any day of the week! Especially after a karate training session with training partners you have trained with for almost 15 years.
Marinade
Mix the following together in a small bowl:
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon canola oil
- 2 tablespoons minced garlic (I just use the big tub from Costco)
- A few shakes of chili powder, cumin, and oregano
Take the marinade, and pour it into a large freezer bag with your cubed steak, and let it marinade in the fridge for at least an hour (I did an hour and a half).
When it’s time to cook, slice some sweet onions and a jalapeño, and cook it in a large skillet (or cast iron pan like me) until the onions are nice and caramelized. Add in the steak and marinade, and cook to your liking. I cooked mine to medium-rare.
For plating, use tortillas of your choice, and toppings. I chose Not-Yo Pickles from Betty’s Pickles, some shredded cheese, and store bought salsa. Enjoy, and wish you had made enough for leftovers!
