Beef and Broccoli w/Zoodles

So, I love Chinese food. But I hate fried food. What’s a girl to do? Make her own, of course!

Now, I won’t claim to have developed this recipe. The original is found over at Pressure Cooking Today (linked for you). I did however modify the preparation as follows:

  • I added the broccoli at the very end, and let the residue heat cook it to my liking
  • I didn’t switch to saute mode to thicken the sauce. The Instant Pot did that all on it’s own
  • Browning was minimal. Because who has time for that?

For the zoodles, that was a very simple thing. I spiralized my zucchini (side note, get yourself a spiralizer. So worth it.), and set them aside. In a small bowl, I whisked together soy sauce, sriracha, and a tablespoon of the Splenda brown sugar substitute (I don’t get any weird aftertaste!). Cooked down some shallots and garlic in a pan, added the sauce, and then cooked the zoodles for a bit. Voila!
